The queen of the recipes with tahini, the famous and always delicious chickpeas hummus!


  • 350 gr small chickpeas
  • 2-3 glasses of Sesames tahini
  • Juice of 2 small lemons or alternatively juice of 1 lemon and 1 level teaspoon of citric acid
  • 1 small onion (optional)
  • 3-5 cloves of garlic
  • 1/3 teaspoon cumin
  • 1 teaspoon baking soda
  • Salt
  • Before serving, add: extra virgin olive oil, parsley, sumac or sweet paprika


Soak the dried chickpeas in a bowl with plenty of water (2-3 liters) and a few tablespoons of salt overnight. The next morning, rinse the chickpeas with plenty of water until it becomes completely clear and then place them in a pot covered with water, add the baking soda and cook until they become soft. Let cool.

Blend the chickpeas in a food processor until they reach a paste-like consistency; gradually add the tahini, salt, lemon juice, and optionally some cooking water, to reach the desired consistency.

Let it rest in the refrigerator for a couple of hours before serving.
