COOKIES WITH CHOCOLATE CHIPS and Halva

A recipe among the classics, shortbread and chocolate chips, transformed into something new thanks to special additions. A dough that remains soft for a few days after baking!

Ingredients

  • 240 gr all-purpose flour
  • 30 gr pastry flour
  • 1½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 1½ teaspoons salt
  • 110 gr butter
  • 110 gr light brown sugar
  • 100 gr granulated sugar
  • 330 gr chocolate chips
  • 2 eggs
  • 1/2 tablespoon vanilla extract
  • A pinch of nutmeg
  • 130 gr halva

Instructions

In the bowl of a food processor, mix at low speed the cold butter cut into cubes, sugar, vanilla, salt, nutmeg, baking powder, and baking soda; slowly increase the speed from low to medium and mix for at least 10 minutes, until the mixture is fluffy and soft. Occasionally stop the mixer to scrape down the sides of the bowl with a spatula.
Add the eggs one at a time with the food processor still running, then slowly pour in both flours; finally, add the chocolate chips and halva.
Take the dough, portion it into quantities of about 170 gr each, and form round cookies, wrap them in plastic wrap, and refrigerate for 12 hours.Preheat the oven to 200°C and line a baking sheet with parchment paper; bake the cookies for 12-15 minutes and let them rest for 15 minutes before serving.
