GRILLED ZUCCHINI SKEWERS with Za’atar tahini yogurt sauce

Grilled zucchini skewers add an elegant touch to a summer table, but they are incredibly simple to prepare! The creamy tahini sauce is the perfect accompaniment for this side dish.


  • 3 medium zucchinis
  • 2-3 tablespoons of extra virgin olive oil
  • ½ cup of Za’atar Sesame tahini
  • ½ cup of ice water
  • Zest and juice of 1 lemon
  • Extra lemon for grilling (optional)
  • ¼ cup of plant-based yogurt
  • Salt and pepper to taste


Preheat the grill to medium-high heat.

Using a vegetable peeler or a mandoline, thinly slice the zucchinis; fold the strips onto themselves and thread onto a skewer from the center; season the skewers with oil, salt, and pepper.

Grill the skewers on each side for 3-4 minutes until they are crispy around the edges (be careful not to burn them, especially if the zucchinis are thinly sliced). If desired, cut the lemon in half and place the cut side of one half on the grill until it is slightly charred (it will take about a couple of minutes).

While the skewers are cooking, prepare the tahini sauce by mixing tahini, ice water, lemon juice, lemon zest, yogurt, salt, and pepper; mix vigorously until smooth and homogeneous. If the result is too thick, add water as needed.

To serve, distribute the sauce on a serving plate and place the cooked skewers on top; garnish with grilled lemon juice and pour tahini sauce over the top.
